Mini Blueberry Protein Muffins

Following our Valentine’s Movement & Mingle morning, so many of you asked for the recipe of those delicious little blueberry muffins… and here it is, folks!
These Mini Blueberry Protein Muffins are simple, wholesome, and incredibly easy to make. Yes — they do require 12 minutes in the oven… but trust me, they are oh so worth it. 💕

They’re perfect as:
A quick post-workout snack
A grab-and-go breakfast
A travel-friendly bite for long journeys
A healthier cinema snack
Or just something sweet without the guilt
And the best part? They make 15 mini muffins at only 22 calories each!
Ingredients
20g oats
½ cup egg whites
15 blueberries (plus a few extra if you’re feeling generous 😉)
1 scoop whey protein powder
2 tbsp coconut flour
3 tbsp cottage cheese
Method
Preheat your oven to 160°C.
In a bowl, mix all ingredients together well until smooth and evenly combined.
Pour the mixture evenly into 15 mini muffin tray slots.
Finish by pushing one blueberry into the centre of each muffin.
Bake for 12 minutes.
Remove and allow to cool slightly (if you can wait!).
Tips for Best Results
Lightly grease your mini muffin tray or use silicone moulds for easy removal.
For extra sweetness, add a touch of vanilla extract or a sprinkle of cinnamon.
Store in the fridge for up to 3 days — perfect for meal prep.
The Real Challenge…
The hardest part? Seeing how long you can wait before eating them.
